Pocatello Costa Vida moves into new location

The Costa Vida in Pocatello has a new home tonight – in Chubbuck.

The Mexican grill moved from its previous location on Quinn Road in Pocatello to Bullock Street in Chubbuck.

On Saturday, the restaurant held a ribbon cutting for its new store.

The owner, Randy Robinson, said the previous location needed a remodel and they wanted to add a drive-thru. So Robinson said they decided it was easier to get a new building.

Construction on the new location started in November. Robinson said building during the winter and all the snow made it difficult.

“It was absolutely horrible to try and build a building in the middle of this winter but we knew we wanted to be open for spring and summer so we kept pushing and we’re just really excited how it turned out,” he said.

He said the plow truck even got stuck in the drive-thru on the store’s soft opening.

But Robinson said despite a few problems, he’s excited to be open and they are pleased with the building so far.

Costa Vida offers catering services, carryout and online ordering. The Chubbuck location is one of three in Southeastern Idaho.
