Fiesta Cancun brings East coast inspired Mexican cuisine
Idaho Falls isn’t the first place you’d think of for Mexican food, but the more authentic the better. Local News 8 Reporter Andre Phillips found a local restaurant on the corner of first and south Higbee that’s shaking things up a bit.
From the moment you step foot inside Fiesta Cancun located at the corner of First Street and South Higbee in Idaho Falls, you’ll notice an East coast meets Southeastern Idaho vibe that’s different than many of the competitor restaurants.
“The beach inspired me,” said Ricco Lanauze. He and his former co-worker Eddie, now business partners both walked away from their jobs in the Food and Beverage industry to create true authentic Mexican dishes.
When it comes to Mexican Cuisine, you often think of lots of citrus or avocados. But it comes as no surprise that the dishes coming out of the kitchen are camera ready. Everything carefully hand-made and the ingredients.
“We just wanted to bring something completely different, something that’s fun for people to share,” said Eddie Ruesga.
While it’s been open for over two months, local residents are all in.
“I’ve been here a few times and I love the table- side guac you can’t go wrong with that,” said one customer.
The Cancun’s Star Dish is nonother than the Pineapple Boat. But rather than the usual rice filled mix, it’s remixed with Fajitas and Margaritas in mind.
I went behind the scenes and saw the process first hand and it’s not what you would expect. The sauce is creamy, rich and the cilantro Poblano rice substituted for regular white rice gives it the extra oomph that surprised this city boy from Chicago.
Just how important is to Ruesga to stand outside of chains?
“I think it’s huge the presentation I think is the next level. There’s a lot of operators that do a lot of things pretty similar; Our foods amazing, but if you took the next step and just the presentation piece really shows the details.”
Yes, pride runs deep here and it shows with the local patrons who sought out great authentic Mexican food.
