“The Melt” food truck offers unique gourmet grilled cheese options

A new food truck is driving onto the scene in Pocatello.
“The Melt” is a food truck focused on grilled cheese and chowder recipes. Friday was its sixth night being open.
Owners Angeline and Greg Underwood said it’s been successful so far and there has been a line every night they’ve been open so far.
Menu options include salads, two different types of chowder and a variety of specialty grilled cheeses. The grilled cheeses are unique because they have added ingredients like macaroni and cheese, coleslaw, turkey and barbecue pork added on.
The Underwoods said they first came up with the idea in February and were able to find a run-down truck. Greg built it into a food truck and “The Melt” was on its way into business.
The Underwoods said they love to cook and wanted to bring something unique to the Gate City.
“There’s just nothing like it in Pocatello,” Angeline Underwood explained. “We wanted to hit on a market that was completely different. There’s a lot of great restaurants in Pocatello and we didn’t want to compete with that – we just wanted to do something that was completely innovative and new.”
“And everybody loves grilled cheese,” added Greg Underwood.
Friday was the debut of a new sandwich, which was named by the public. It’s called “Southern Comfort” and has coleslaw, potato salad, potato chips, homemade Kansas BBQ sauce and homemade garlic pickles on it. The new addition sold out Friday night in less than an hour and a half.
The Melt is only open Fridays and Saturdays. On Fridays, the truck will be in the parking lot across from Buffalo Wild Wings, in the Wanderlust parking lot off Hurley Drive. On Saturdays, the truck will be at Jim Dandy’s.
